Paella pan sizes: how many people each one feeds

Bigger isn't automatically better — the right size depends on your table and on what your stove/hob can actually heat evenly. Here's a sourced servings chart across three common sizes.

Servings by diameter

Original Paella's servings-by-diameter chart is based on 100g of dry rice per person, and gives three tiers per size: a thin, Valenciana-style layer, a medium depth, and the pan filled to capacity.

The chart doesn't state which size is "most popular" for a home kitchen, and we haven't found another source that does either — so that's left as unknown rather than guessed.

Why bigger isn't automatically better

The rule of thumb from a paella-pan retailer's FAQ is to buy the largest pan your stove/hob can heat evenly, not simply the largest pan you can find: the larger the pan, the thinner the rice layer, and a thinner layer is generally considered more delicious. Go too small and the rice piles up thick in the middle; go too large for your burner and the heat turns uneven across the base, cooking the edges faster than the centre.

What a home stove/hob can actually take

One US retailer's sizing guide puts a home gas stovetop's usable maximum at around 20–22 inches (roughly 50–56cm), and an oven's usable width at around 17–18 inches — though that source gives no servings figures of its own, which is why the numbers above come from a separate chart. A 40cm pan, the size covered elsewhere on this site, sits comfortably inside that single-burner range; anything meaningfully larger is more likely to need either a dedicated multi-ring paella burner or moving the pan periodically across two rings for even heat.
